Pastoralism in Samnium has extremely ancient origins; in a prevalently hilly area, cattle is left free to graze during several months of the year at 600 metres above sea level. Mountain grass is uncontaminated and has nutritional values that vary completely from to the ones we find in the grass downhill; this gives unique scents to the milk, the main element in the making of our typical dairy products.
