An ancient variety of cheese, whose origins date back to the Samnites.
The crust is thick and rough, of a pale yellow colour, light brown when
matured. The curd is hard, compact and oily, of a pale yellow colour;
it presents irregularly sparse thin eyes.

This cheese presents different organoleptic characteristics depending
on the grazing land.
