Malvasia is a balanced, fruity, and fresh wine

We matchedit with a very ancient cheese, the Samnite Pecorino,

with a crust thick and rough, of a pale yellow colour and the hard, compact and
oily curd, with irregularly sparse thin eyes.
Our Samnite appetizer box includes also the Flat Pancetta that is
made by cutting the pig belly in a rectangular shape, and the
Garlic sprout: they are seared in white wine vinegar, seasoned with
dried chili pepper and garlic, jarred by hand and preserved in
high quality extra-virgin local
olive oil.
